Winemaker Notes

The Old Toll cabernet was harvested in September & October 2009. Like the merlot, cabernet franc and petit verdot, these wines were harvested by hand in the cool of the morning. They were cold soaked at 45F for several days. During their cold soak analysis we get an idea of just what we have received. Based on these results, the wines are warmed, adjusted if needed, inoculated with yeast, nutrients, etc. and the fermentation process begins. When fermentation comes to a halt, the wines are gassed and allowed to sit for an extended maceration. Extended maceration depends upon taste and a visual look at the wine.

Pressed in a stainless basket press, all the wines then go immediately to barrels. At this time malolactic is induced. Once malolactic is complete the wines are racked, so2 is added and the real process begins.  The wines will see 2 to 2.5 years of aging. These wines are kept separate by variety and blocks until the final blend is put together a few months before bottling.
