Tasting Notes

The Old Toll cabernet sauvignon is rich, black and inky in color, nose of black chocolate, blackberries, anise, toffee coffee and wet stone, the depth and complexity coming from 3 Cabernet Sauvignon clones (Clone 7, Clone 337 and Clone 169). The petit verdot grapes bring high tones of acid, red cherries, rose petals, beef and tar. The small amount of merlot with softer tannins contributes dark cherries, briar patch, dried fruit with an enhanced richness in the lingering finish. The cabernet franc is a rich, clean example of wild berries, leather, mint, and sumac touched by a great palate of clean tannins. (tasting notes, barrel samples, individual lots, March, 2011)

Winemaker Notes

The Old Toll cabernet was harvested in September & October 2009. Like the merlot, cabernet franc and petit verdot, these wines were harvested by hand in the cool of the morning. They were cold soaked at 45F for several days. During their cold soak analysis we get an idea of just what we have received. Based on these results, the wines are warmed, adjusted if needed, inoculated with yeast, nutrients, etc. and the fermentation process begins. When fermentation comes to a halt, the wines are gassed and allowed to sit for an extended maceration. Extended maceration depends upon taste and a visual look at the wine.

Pressed in a stainless basket press, all the wines then go immediately to barrels. At this time malolactic is induced. Once malolactic is complete the wines are racked, so2 is added and the real process begins. The wines will see 2 to 2.5 years of aging. These wines are kept separate by variety and blocks until the final blend is put together a few months before bottling.

Your member discount is applied automatically to club orders. It should be applied to all orders after you login. If you have any issues at all, contact us and we will adjust the pricing for you. Members always receive Member pricing when order wines.

How much does shipping cost?

Shipping is based on order size, destination, and selected service. Our standard carriers are UPS and FedEx Ground, though we can accommodate any service level requested. While we are a small, family-owned winery, we partner with one of the largest wine shippers in the United States. If it is legal to ship to your location, we can make it happen.

What is your return policy?

What if my wine arrives damaged?

We do everything possible to get your wine to you in perfect condition but somethings are out of our control. If you wine arrived damage, please notify us within 14 days, take a picture and send the photo by email. Keep the bottle(s). Our team who will arrange a replacement or credit once we evaluate the issue.
