Winemaker Notes

Made using Champagne press protocols and cold fermentation to preserve freshness and aromatics. Cold stabilized before second fermentation using the Charmat Method (second fermentation in stainless steel tanks). 12.5% ABV.

The extended growing season allows for slow, even ripening, preserving delicate aromatics and bright acidity. We harvest early to highlight red fruit character and maintain a crisp, elegant profile, expressing the purity and finesse that define our Rosé style.

Vineyard Profile

M3

RARECAT has been working with Grenache from M3 for years. The sandy soils of give us vines easy access to water, so the clusters are robust and perfect for our Provence-style Rosé, and Sparkling Barbera—a wine that is as bright and effortless as a summer afternoon. The old, scraggly vines may not look refined, but they give us exactly what we are looking for: delicate aromatics, lifted fruit, and just enough tannin to shape the wine without weighing it down.

The result is a wine that is crisp, refreshing, and quietly irresistible—made to delight, not to overwhelm. A wine that feels like happiness in the bottle.
