Introducing RARECAT Blanc de Barbera, a delightful sparkling wine made from 100% Barbera grapes. Although our team has 80 years of combined experience making wine in Napa, none of us had ever crafted a Blanc de Barbera. The idea originated in the vineyard during a conversation with Gio, our Italian grape grower. He described Barbera as having low tannins, high acidity, and great aromatics. As a champagne producer who makes Blanc de Noir from Pinot Noir grapes, it sounded like the perfect variety for sparkling wine. Fortunately, this exciting experiment was a home run!

Production Notes
We used champagne press protocols, cold fermentation in tank and cold stablized before starting the second fermentation process. This version of our Blanc de Barbera uses Charmat Method for second fermination.
